Sapphire Cuisines of India: Elevating Tradition on the Upper West Side
Located on 2014 Broadway, Sapphire Cuisines of India offers top-tier Indian fare out of their new Upper West Side. Veteran restauranteur Darshan Shah and Executive Chef Sachin Wagh elevate the restaurant’s menu by introducing a modern Avant-Garde prix fixe dinner menu which allows diners to curate their own experience. They have also upgraded the offerings of the traditional menu items by utilizing better ingredients such as Niman Ranch Lamb and Bell & Evans Organic Chicken and grinding their spices daily on-premises.
Upon arriving to Sapphire, myself and my guest were greeted by Darshan who promptly seated us. A waiter graciously brought over some papadam bread with two dipping sauces; one was a little spicy and the other was along the lines of sour cream. I love how they both complemented each other and how they both went perfectly with the papadam. Darshan was also kind enough to send over these yogurt puffs with a mango slaw. It was almost like savory mango lassi in a really nice and soft crust if you can imagine that sort of thing.
